Since we're working from home, here are 5 types of sandwiches to get you through during lockdown snacking!
Chickpea Salad Sandwich
Makes 2 portions
Ingredients
- 1 1/2 cups of cooked chickpeas
- 1 celery stalk
- 1 medium red onion
- 1 to 2 tsp of mayonnaise
- 1 tsp of lemon juice
- Salt and pepper to taste
- 4 slices of bread
- Lettuce
- Cucumbers
Instructions
1. Thinly slice the celery and green onions.
2. Drain and rinse the chickpeas, then smash them with a fork.
3. Mix the chickpeas, celery, green onions, mayonnaise, and lemon juice together, then season with salt and pepper.
4. Start assembling your sandwich. Top with cucumbers and lettuce or any other leafy greens.
Caprese Sandwich
Makes 2 portions
Ingredients
- 1/4 cup pesto
- 2 ciabatta rolls or 4 slices of bread
- 2oz fresh mozzarella, thickly sliced
- 1 tomato, thickly sliced
Instructions
Spread the pesto on your bread with the mozzarella and tomatoes layers. Top with the second piece of bread and enjoy!
Simple Niçoise-Style Sandwich
Makes 2 portions
Ingredients
- 1 can of tuna in oil, drained
- 2 tomatoes, sliced
- 1/2 small red onion, chopped
- 4 slices of bread or two sandwich rolls
- 4-6 olives, chopped
- 2 large eggs, hard-boiled and sliced
- 1 tsp of mayonnaise
- 2 tsp of Dijon mustard
- Salt and pepper to taste
Instructions
1. Mix the mustard and mayonnaise and season with salt and pepper.
2. After draining the tuna, separate into flakes and mix in the chopped onions and olives.
3. Add 3/4 of the mayonnaise and mustard mix to the tuna mix and then blend.
4. Spread the remaining mayonnaise and mustard on your bread and layer the tuna mix, tomatoes and hard-boiled eggs.
Turkey Avocado Sandwich
Makes 2 portions
Ingredients
- 4 slices of bread
- 2 lettuce leaves
- 100g turkey
- 1 tomato, sliced
- 1 large ripe avocado, sliced
- 1 tsp of mayonnaise
- Bean sprouts or purslane (optional)
Instructions
To assemble, spread the mayonnaise on both slices of bread. Layer the turkey, tomato and lettuce, then top with bean sprouts or purslane (if desired).
Smoked Salmon Open-Faced Sandwich
Makes 2 portions
Ingredients
- 4 slices of bread
- 50g cream cheese
- 1 small tomato, thinly sliced
- 60g smoked salmon
- 1/2 small red onion, thinly sliced
- 1/2 tsp capers
- 4 cucumber slices
- 1 lemon wedge
Instructions
1. Lightly toast the bread and spread with cream cheese.
2. Layer smoked salmon, tomato slices, and onions, then top with capers and cucumber.
3. Drizzle with lemon juice to finish.
